peas, if you please

of course i prefer to eat peas with a spoon.

peas are petite, edible emeralds that i favor for lunch. this bright salad is simple and healthy, and because they are a favorite, i almost always have leftover peas. this appealing, quick dish makes it into my bowl on a regular basis: i'm always happy to sit down to it, and satisfied when i get up from the table. try it with different herbs, or toss it with chopped cucumber instead of tomatoes . . . and, don't forget your spoon.

• cooked peas (frozen will do: micro-waved just until heated through)
• chopped tomatoes
• feta cheese
• fresh dill
• a few dashes of balsamic vinegar
• a drizzle of olive oil
• s&p
