fish stew

one pot meals save time and energy in the kitchen. on nights when i don't have enough of either, i usually make dinner with just one pan. this stew is rich in flavor, and hearty in satisfaction. i serve it with bread and a dry white wine.
ingredients
• 1 med. yellow onion, chopped
• 1/2 green cabbage, sliced (or chopped celery)
• 2 cloves of minced garlic
• 1 and 1/2 cups of veg. stock (or bouillon)
• 1 bay leaf
• red pepper flakes
• 2 tbl. chopped basil
• 1 cup of white wine
• 1 28 oz. can of whole tomatoes
• 2 8oz. cans of chopped clams with the juice
• 1 white fish fillet
• shrimp
• salt & pepper
• cooked linguini
• minced cilantro
directions
1. cook the onion, garlic & cabbage in the veg. stock.
2. add the white bay leaf, red pepper flakes and basil, and stir to release their fragrance.
3. add the white wine, whole tomatoes with juice, and the clam juice to the pot.
4. break up the tomatoes with a knife & wooden spoon, and stew down the mixture until reduced by about 1/3.
5. add the fish, chopped clams, & shrimp & season with salt and pepper.
6. serve over linguini and top with dill or cilantro.
